Is this possible? I've seen it happen on some more popular tablets, and there's no reason why it wouldn't work on the hardware we have here, but I'm not advanced enough to handle a reconstruction of the code and everything else necessary to get it to work on these tablets.

I may be wrong, but from my understanding, the only reason your tablet should not be supported by ubuntu or any android rom is : the lack of drivers for the hardware of the tablet. That means :
* If your tablet is arnova : Arnova says : F**k you
