if you want a normal backup then you must change the settings in cwm

if you are in cwm and you go to backup and restore
then look if you see on the last option - choose backup format.
if you have that click on it.
than you have dup (default) and tar
choose tar.
thats a normal backup
than you have a full .img but in tar format .

here tatty a usefull link for your tablet
The Samsung Galaxy Tab 2 is an Android tablet released in the spring of 2012. It has many different versions, with variations coming in capacity, connectivity, and screen size. The screen size options are 7" and 10.1". Storage capacities vary between 16 GB and 32 GB. There are also HSDPA enabled...
here you find everything
for experiment

ok i finaly found how you unpack and repack the boot.img from this tablet.
its wierd you said that the system is ext4
but if i look on the extracted files off the boot.img
than everythings mounts with yaffs2
here a example of your init.rc from the boot.img
# mount mtd partitions
# Mount /system rw first to give the filesystem a chance to save a checkpoint
mount yaffs2 mtd@system /system
mount yaffs2 mtd@system /system ro remount
mount yaffs2 mtd@userdata /data nosuid nodev
mount yaffs2 mtd@cache /cache nosuid nodev
must everything runs on ext4 then is this tablet a supersonic flymachine
