Extracting rom/firmware

Guys, Im a hobbiest and like to tinker, have got numerous android tv devices from generic boxes to mi stick, tivo stick etc.
I have always wondered how the guys pull the rom/firmware from the various devices.
id love to be able to tnker with the likes of custom apps installed and boot intro etc

any pointers on this subject?
