It depends on the ROM but it should be similar on most... open settings->accounts and then the account you want to get rid of... select the menu to find the option to remove.

Usually, I've found that you either need to add another Google account in order to delete the single account. It won't let you delete the only account for some reason.

The other solution, if you are getting rid of the device, is to flash a fresh ROM installation, and just don't add your account...making it just like a new device (for someone else to have a clean slate).

I know for a fact it is possible on some. My Imito QX1 running 4.2.2 as one example. You must go all of the way into the account sync settings... select menu and Remove Account is an available option.

If you are on an earlier version of Android without the option and you are rooted... deleting the accounts.db located in either...

          /data/system
          or
          /data/system/users/0/

Will also remove the accounts etc upon next reboot.
