You can also use the same way via fdisk to modify the partition table to get a bigger RFS partition (a little bit more complicate because of the extended partition you have to rebuild the hole partition table), BUT of course you have to do it at another Linux system...
And maybe after this you have to do a sudo resize2fs /dev/xyz (which you can do at the running system (online))...
I don't know, but you should also be able to handle it at eMMC/NAND, but of course not via fdisk but via one of the configuration files...

RAM is a known problem (also at Android), nobody knows why you see not the hole RAM...
Cores, I can't remember what I saw at the system monitor, but I think I saw 8 cores, but maybe they disabled the LITTLE and only using the big at the moment...
